Safe manipulation of poultry products from the store to your family's table

Central Bernard spares no effort to provide the marketplace with safe, traceable poultry products. However, once the chicken is taken off the shelf and dropped in a shopping cart, the responsibility is passed-on to the consumer. The following tips will help you in safely taking our fresh products from the supermarket to your family table.

  • When shopping, wait until the last moment before taking chicken products from the refrigerated counter and check out promptly. Chicken should never be left out of the cold for more than 2 hours.
  • Make sure the product is fresh (check expiry date) and that packaging is well sealed. Leakage could contaminate other items.
  • As soon as you get home, place your chicken in the refrigerator (bottom shelf) and cook within 48 hours to enjoy maximum freshness of the product.
  • You can also freeze fresh chicken and it will stay fresh for 6 to 9 months.
  • Frozen chicken must be defrosted slowly. The best way is to let it rest overnight in the refrigerator.
  • Fresh chicken can be flavoured by marinating the raw meat in a wide variety of ingredients. Marinade softens the meat and allows you to express your culinary creativity. Chicken can marinate in the refrigerator anywhere between 2 to 48 hours.
  • When preparing fresh chicken in your kitchen, always use different utensils and cutting boards for raw meat and clean them with soap and hot water before using again. Cross contamination must be avoided when manipulating raw chicken meat.
  • Chicken should be cooked until the internal temperature of the meat rises above 165 degrees F to ensure that all bacteria will be destroyed.
